In This Episode
The Maverick Food Pantry plays a crucial role in making sure UNO students, faculty, and staff are supported in their professional journeys. Because of their work to fight food insecurity, every Maverick has an opportunity to meet their dietary and personal hygiene needs.
For the third episode of “Out of Office with Chancellor Li,” Li met with food pantry coordinator Madeline St. Clair to cook “Chancellor’s Chili” using only items that can be found in the food pantry, and learn about an app developed by UNO Scott Scholars to make utilizing the food pantry even easier.

Try your hand at making the Chancellor's Chili!
- 1 can of black beans
- 1 can of kidney beans
- 1 can of diced tomatoes
- 1 can of tomato sauce
- Salt, pepper, and cumin to season
