Brielle Unseld

Brielle currently works at Children's Nebraska as a nurtition lab technician, fortifying breast milk and preparing formula for patients. This past summer, Brielle worked as a research assistant in the University of Nebraska-Lincoln's Food Science and Technology Lab, where she studied allergen detection via different industry kits, specifically focusing on gluten in whole wheat flour and how it's detected to promote food safety in gluten-free products. She also has experience as a baker at Great Harvest Bread Co., a food quality and safety intern at Grande Cheese, and a product development intern at James Skinner Baking Company. At UNO, Brielle has served as a student ambassador and was a community head at the JPII Newman Center in 2024-2025. Following graduation, Brielle plans to pursue a career as in food science and nutrition.
