SOLUTION TO PROBLEM 2

The solid material in 500 lbs of cucumbers represents $100-99=1\%$ of that quantity i.e. 5 lbs. Overnight, only water is lost by evaporation, to such an extent that 5 lbs represent now $2\%$ of the new quantity x. Hence $x\times 0.02=5$ and therefore the morning weight x is x=5/0.02=250 lbs.
