Food

What have we done?

  • Reusable dinnerware is utilized in the Maverick Buffet and at catered events.
  • The Food Court has experimented with reusable dinnerware and alternatives to Styrofoam (though it has been a while).
  • Healthy alternatives (grilled chicken, for example) have been offered on various menus.

What can we do?
  • Buy food from local markets where practical. This reduces the amount of travel required to transport food across the country, which greatly impacts our environment. Local foods are more fresh, and benefit the local economy.
  • Buy organic foods. These foods are free from exposure to harmful chemicals and also benefit the health of the soil, and the ecosystems in which crops are grown.
  • Consider selling reusable drink containers with associated discounts for refills (Lug-A-Mug).
  • Evaluate replacing Styrofoam food containers with those made from corn (PLA) locally.
  • Explore capturing and composting food waste and using on gardens where practical.
  • Explore a pilot project to process used cooking oil to make biodiesel for use on campus.
